The restaurant pays homage to its origin as the first establishment that the family patriarch and matriarch operated, showcasing an evolution of tradition. I indulged in the Santi Santamaría-style colt shank with creamy mashed potatoes, a dish cooked with love and passion, reminiscent of my cherished Andalusian gastronomic experiences.Wandering the historical square, I ventured to nearby eateries like Gastrobar La Ribera, savoring traditional dishes with a contemporary touch. However, the hotel's breakfast fell short of expectations, lacking variety and warmth, failing to justify the €8 price tag. An enticing blend of history and gastronomy awaits those who seek a taste of Spanish authenticity in the heart of Seville.
